Claypot Fish Head with Pak-Choy


Ingredients

600g Red Fish Head
400g Pak Choy
2 Tomatoes
5 slices Ginger
5 cloves Garlic
3 tbsp Cornstarch

Seasoning

4 tbsp black soya sauce
2 tbsp soya sauce
2 tbsp sugar
1 tsp salt
1/3 cup water
1 cup Home made rice wine

Method

First, chop the fish head into pieces (can ask the fish monger to do it when purchase), marinate with salt, for 15-30minutes. Dab on corntarch, shake-it and d
eep-fry till golden-brown and remove

Meantime, you can start to chop up your garlic, ginger and tomatoes to prepare the gravy.

Heat up a saucepan with minimal oil. Stir-fry the garlic, ginger and tomatoe
s till fragrant, add in Pak-Choy, season it with salt, sugar, soya sauce and black soya sauce and water to simmer briefly.


Now, transfer it into the clay pot:



Reduce the heat and add the "home-made rice wine" and simmer it further:


Put in the Fish head and simmer it further...


The final thing to add is cornstarch to thicken the gravy before serve. Serve it with hot rice.

after 10 minutes, my 45 minutes of hard work and labour was rewarded by these satisfying faces...

MMU

Last weekend, I went to CCF, MMU to share on 大学生活面面观 "How to Manage your Campus Life". I've not been to MMU or Cyberjaya for many years since the last time I went for a friend convo.

I used MRR II-Kesas Highway-LDP-Puchong IOI-DHL-Cyberjaya of "such a loooooooooong way!" to have to be there by 8.00pm. I started my journey at 6.55pm right after my church meeting. It was a Sunday evening and I tot it should be free from jam and I rang the organiser telling them I can reach there say 7.45 before they start.

When I started driving along MRR II via Melawati, it was free all the way to Pandan Jaya/Indah before the crawl started and by the time I turned-in to LDP Puchong exit it was already 7.45. With the kind of "A Speaker Cannot be Late No Matter What" spirit I speed my poor Wira 1.3 to the limit along Puchong Cyberjaya Highway. But God, when I reached the area of Cyberjaya, oosh! guess what? I missed the exit to Cyberjaya/MMU!!!! Grrrrrrrrrr!

Thank God and with the Sungai Rambai Spirit I managed to U-turn and pushed my poor Wira and I managed to reach MMU by 8.00pm. While I was searching around for the organiser who are supposed to wait for me at the gate was no sight at all, I called her and she told me this: wait, I am on my way......

So, I was late for 15 minutes!!
so, you may say, Mr Wee 15 minutes, okay-lar!! But just before the days, I was complaining to Juliane about a speaker who was supposed to talk on "Time management" came late for the talk!! Whatever excuse/reason I may have, u know what, "A Speaker Cannot be Late No Matter What"!! God must be telling me this: next time don't complain so much, boy! hokay, hokay, next time no complain liao!

So I went on to share on Managing Your Campus Life! (see attached file here)

After the fellowship, u know the "normal refreshment" were served lar! You will never know what we had for the night as refreshment. Juliane, Mr Lam and Teck will definitely love it.. they serve this:

Matthew: Then, how old will you live?

定谦:嗯。。。。100岁!!
Lucas: Errrr..100 years old!

定节:Hmm, 我才不要活到100岁。。
Matthew: Hmmm, I don't want to grow that old...

定节:如果活到100岁,走路一定会撞到屋顶的。。。爸哦??
Matthew: If I grow to 100 years old, I'll definitely hit the ceiling whenever I walk....huh, Papa?

Sungai Rambai Spirit

The Sinchew Daily, Melaka edition had this report on my hometown Sungai Rambai. They reported the Impact of the opening of Lebuhraya Alor Gajah-Muar (AMJ) toward the small towns along the old trunk road between Muar and Melaka.

Before the open-up of the "highway', to crossing the road from grandma's house to daddy's house was very difficult as it use to be the main road between M
elaka and Muar.

But now, look at the photo (left), tak ada kereta lagi lar!
Thanks to AMJ, this path is no longer the main road for vehicles (Cars, Trucks, Lorry, Bas Aziz, MOS, Teksi Biru, Melaka-Singapore Express, Express transnational, Melaka-Kluang express dan lain-lain) between Melaka and Johor/Down South.

No more late night's "Jeritan Hantu" from the trailer lorry which would sound like this: ooo! ooo !ooooooooooooo!!..................ooooooooooooo!!!! for the residents beside the road. My big sister Siew Kim and Ah Pan Pek and the rest of the old folks will have a very good night sleep.

If you continue to read the full report, and read on the residents who were interviewed, i.e. Uncle Goh, Cikgu Lye, Ah Kew ah mai were all in the very relax and sentimental or rather very "nostalgia" of this small town. No one have had any "negative" comments or "tomorrow-will-not-be-better" like of attitude.

賴榮新倒很享受現在寧靜及空氣清新的環境". Ya! That should be the way, That is what I called Sungai Rambai Spirit!! Tomorrow will be better!!

車少了鎮民“樂得清靜"雙溪南眉商店開半天.

(馬六甲訊)命運與旺梨不相伯仲的雙溪南眉,自AMJ大道啟用後亦變得十分冷清,市鎮商家開始實行“半天制”,有者則已結束營業,剩下部份老居民守護著古老的小鎮,樂觀地享受寧靜人生。

AMJ大道啟用後,雙溪南眉已不再是通往麻坡的必經之路,於是經過小鎮的車子越來越少,使原本沒落的小鎮更添孤寂,商家也失去僅有的顧客來源。

剩老人打理祖傳生意

雖然從AMJ大道進入雙溪南眉鎮路程不遠,但由於小鎮本身多年沒有大事發展,年輕人也嚴重流失,造成雙溪南眉沒有吸引外人到來的賣點,使用大道者自然是“經過雙溪南眉而不入”。

因此,小鎮的咖啡店、五金店、日常用品店及雜貨店搬的搬、關的關,咖啡店索性下午一兩點就關店休息,令午後的小鎮寧靜無比。

受訪的當地居民認為,由於小鎮生意都是祖傳80多年的老生意,而現在多數剩下老人家在打理生意,如今AMJ大道帶走了當地的車潮及人潮,可說是不可避免的局面。

因此,居民認為,與其埋怨,倒不如享受沒有車聲、污染及噪音的安逸生活。

吳志逑:東山再起恐怕很難

鞋店業者吳志逑(82歲)表示,在AMJ大道啟用以前,雙溪南眉的街道,一分鐘內約有30輛車馳過。如今,公眾習慣取道AMJ大道後,一分鐘內馳過的車輛只有四五輛。

“從馬六甲到麻坡的人,不必再經過這裡,使這裡原本就很少的生意量變得更差。”

他說,由於銷量太差,商家都不敢進貨。同時,商家又擔心老店隨時要拆,貨品沒地方放,到時大家都不知該何去何從。

吳志逑也是當地馬華支會主席,他從小在當地生活,見證40年代雙溪南眉曾有的風光,也陪伴它從風光走向現在的沒落時代。

他說,雙溪南眉就像被遺忘了的地方,沒有新發展,很多人搬離這裡,加上現在大道帶走人潮的效應,雙溪南眉要東山再起恐怕很難。

“除非這裡能增設新住宅區、店屋及工業區,才能使小鎮再活起來。”

賴榮新:車輛少可減少污染

退休校長賴榮新(63歲)表示,雖然現在小鎮已沒有熱鬧氣氛,但往好的方面想,車子少對減少污染也有幫助,過馬路也比較安全。

他說,當局曾計劃擴建小鎮的車道,甚至建了分界堤和交通燈,但現在當地已非重要街道,相信不需再擴建。

他表示,這裡缺乏工作機會,年輕人不得不外出找機會,這也是造成雙溪南眉走向“睡城”的原因之一。

不過,作為當地居民,賴榮新倒很享受現在寧靜及空氣清新的環境。

田英嬌:開店只為打發日子

田英嬌(72歲)表示,以前經常有行銷人員經過,停下來喝茶或消費,現在連這些人也被AMJ大道吸引了。

“現在用大道去麻坡非常方便,行銷人員可直接到麻坡用餐,因此影響了這裡飲食店的生意,鎮上的業者下午一兩點就休息了。”

她表示,她嫁來當地51年,記得當年市鎮風光的時候,大家營業到晚上10點多,現在很多老商家都已結束營業,大家沒有信心再留下。

“我們現在都老了,只是開店來打發日子而已,而且也不舍得離開。” (星洲日報/古城•2007.07.15)
